How to make sugar free coconut whipped cream with berries

Whew!! What a whirlwind of week we have had here in Los Angeles. It was election week and has been a very lively week across the country. It has also been summertime weather in the fall! Since there has been so much going on I decided to take some time out with friends and enjoy this heat wave. I went on beach bike rides, lounging in the sand and indulging in expensive over-priced lattes and green juices! Ha! Ha!

How has your week been ? Have you taken anytime out for what makes you happy? It’s easy to get wrapped up with the commotion around us, and to get sucked in like a vortex. Try to do something nice for yourself this weekend. It could be as simple as meeting up with a friend, cuddling your pet, sleeping in, cooking, or drinking fancy lattes. Whatever it may be make sure to take some time out to do what makes you feel at peace.

I have the perfect recipe for you today! It’s versatile, healthy and will be the perfect dessert to bring to your holiday parties or just to make a bowl for yourself. It’s my famous coconut whipped cream. I make this up several times a week. I top it with berries, and chocolate chips as a dessert for my family. This dish helped me go sugar-free and I have included a sugar free recipe. It can be added to the top of Pumpkin pies, ice cream, coffees, teas and the list goes on and on. This recipe is one of my biggest hits and friends are constantly asking me for the recipe. It has a very creamy fluffy texture and if flavored with cacao it tastes like chocolate pudding. Oh wow, I think I will be making a bowl of this tonight!! It has saved me many nights when my sweet tooth comes on. RECIPE:

This recipe is my go-to for parties or after dinner desert. It’s always a big hit. It also helps with sugar addictions and transitioning into being sugar free.

1 can full fat coconut cream
1 teaspoon vanilla
3-5 drops of stevia, or 1 tablespoon maple syrup, or 1 tablespoon coconut sugar.  Try any unrefined sugar or sugar free options.

DIRECTIONS:

Chill the can of coconut cream into fridge the day before making it . It needs to be very firm. I keep several cans in my fridge at a time. You never know when you need an impromptu desert.

Scoop out hard part of cream and leave the liquid behind . If the liquid gets in your dish it will make it watery and not fluffy.

Scoop cream into a standing mixer or use a hand blender. I use my kitchen aid standing mixer. If you don’t have any of these use a blender . You may have to scrap the sides every few seconds if you use a blender.

As it’s blending add in your choice of sweetener and vanilla.

Scoop into a bowl and top with berries. I like to use strawberries , blueberries , and raspberries and I sprinkle with cinnamon.

Ideas :
Cacao pudding: add 1-2 tablespoon of cacao and 1-2 drops of mint if you like mint chip flavors.

Berry flavor: add your favorite sugar free protein powder. I add a scoop of vegan protein powder with berry flavor. Use any flavor or brand of protein powder you like.

Add a dollop on your coffee or tea

Store cream in tight lidded container and it will last up to 5-7 days. You may eat in one night though!
